Ash Lambe & The 32-20’s bring the raw sound of Chicago blues to Rain Dogs as part of St Patrick’s Week.

Inspired by legends like Muddy Waters, Howlin’ Wolf and Elmore James, the band deliver gritty, electric blues played the way it should be.

APEROL GRANITA

In case the bar was doing a bad job at getting you drunk, we thought we’d have a go in the kitchen as well.

Does what it says on the tin. Take Aperol, make into ice. We’ve added some black lime Sherbert as well because we like to complicate things.
The limes that don’t make it into our pickle are poached in salty water, and dehydrated until they turn black. We blitz them into a powder and mix them up with citric acid powder and sugar, and then put them on top of stuff to make it real nice.

Yee-haw.

A splash of Aperol and Cocchi dry vermouth adds complexity, while egg white brings a silky, frothy finish. Light, refreshing, and perfectly balanced this cocktail preserves the spirit of the original while making it entirely its own.

ASSAM CURED MACKEREL, CITRUS & DASHI

Mackerel season is upon us, just.

They’re coming in fresh from the Dorset coast, and if you haven’t got a bbq then the only other way to eat them is cured and doused in acid – ceviche style. We’ve sweet cured ours, and infused it with assam; black tea from Northern India. We then take some more assam, brew a strong cuppa, and turn that into a dashi that we make with wakame seaweed. We season it shiro shoyu (otherwise known as white soy), sesame oil, orange fig vinegar, and molasses.
Citrus fruit – this week it’s pink grapefruit – pickled radish, and torched pickled onions cut through the umami of the broth.
A lightly smoked mayonnaise adds richness and brings the dish together. Just to show we can be sophisticated. Sometimes.

We have many a stunning bottle of vino to accompany.

This is an absolute treat. And it's free because we're nice like that.

ROASTED CAULIFLOWER, ROSCOFF, PICKLES & SEEDS

If we were a fine dining restaurant that had got stuck in the noughties, we’d probably call this “cauliflower three ways”. Thankfully, we’re not. So, we haven’t.

Cauliflower is roasted and pureed with a sprinkling of nutritional yeast. More cauliflower is finely sliced and compressed with lemon juice and salt. Another chunk is then lightly fried. Our cruciferous friend is joined on the plate by the humble Roscoff onion: some roasted and blitzed to a fine pure, some pickled in malt vinegar. Toasted sunflower and pumpkin seeds, English rapeseed oil, dehydrated mushroom powder, toasted malt, and crispy sage wrap the dish off.
No animals were harmed in the making of this beauty.

DEEP FRIED COCKLE POPCORN

Try saying that when you’re pissed.

Our nod to fried fish, a staple of the east end. Cockles, wee mud-dwelling bivalves – used to be racked from the banks of the Thames and sold in wheelbarrows in the east end. We’ve dipped them in tempura, and fried them. Simple as that really.
Oh, and that yellow stuff is a fat dollop of punchy saffron aioli. Just for good measure.

LINSEED FRENCH TOAST BRÛLÉE

Some sweetness for a rainy day that needs it.

This is not brioche dribbled in sweetened egg. Cast any prior breakfast related disappointments from your mind. We have gone back to the roots of this classic.
The original recipe for pain perdu, as our neighbours call it – literally, ‘lost bread’ – rounded up all the left-over baguettes across Paris and soaked them thoroughly in custard before making them brown and delicious in hot butter. At the end of the day at Rain Dogs there is – inevitably – some bread left over.
We hate waste. We love French toast. So, we decided to make it properly. We’re topping ours with a rose hibiscus syrup, and glaçe apples.

A fan favorite...already. SCRUMPTIOUS.

FRIED CHICKEN SCOTCH EGG ( & NICE SPICE ) 🥚

What came first? Fried chicken or the scotch egg? Who knows. Who cares.
Here’s a spin on a classic: soft boiled eggs take a soy/mirin bath overnight. In the fridge next door, tenderised chicken breast is getting friendly with a mixture of dashi, our own patented Nice Spice, and a menagerie of other tasty things (buttermilk most likely made an appearance at some point).
The next day, a few hours before you decide to come for a drink and some grub, our eggs get swaddled in chicken bouillon powder and wrap themselves up in a poultry blanket. They somehow find their way into a vat of assorted and seasoned flours, and spend the next two minutes or so dancing between that and a tub of wet goodness (more buttermilk almost certain).

Frying is imminent and inevitable. Soft jammy yolks, proper, old school chicken shop fried chicken. Dressed? Obviously. Who eats food naked? Or naked food… either way… Smoked, fried, crispy, and fermented chillis – that’s some Nice Spice. Yakatori glaze and kewpie mayo because why not. A bed of shredded hispi means this dish is perfect for those seeking a cleaner, more balanced diet…

REUBEN A LA BOURDAIN

To start our food journey off, where better place than with a homage to a man who inspired many a cook, chef and traveller.

We all miss Tony. His favourite sandwich, so he once said, went a bit like this: get a pan, make it hot. Fold some mortadella into hot oil, and fry it until crispy. Layer on Swiss cheese, and melt. Remove from the pan and fry some bread in the same oil. Add a little butter. Construct sandwich with mustard and eat. It’s one hell of a sandwich. But, this being Brick Lane – home to some of London’s greatest Jewish deli’s, we thought we’d take Tony’s technique and apply it to the daddy of deli sandwiches: the Reuben.
Fried pastrami and Emmental are layered up with Thousand Islands dressing, and fennelkraut. Sourdough toasted in brown butter keeps this medley of delicious things cosy on it’s way to your table.
